Monica's Gluten-Free Baked Donuts Recipe
Mix wet ingredients with a whisk for 30 seconds until emulsified and add dry on top. Fold. Transfer to a piping bag.
Lightly grease a donut mold and fill with the batter until 3/4 full.
Bake at 425 F for 10 minutes or until cooked through, being careful not to over-bake lest they become dry.
Let them cool and glaze or cover with butter and sugar.
* You can add cinnamon, nutmeg, ginger or cardamom to the batter or the glaze.
